Let me suggest a tantalizing idea: chicken with mojito sauce! Trust me, it’s an easy and delicious recipe that will win over your taste buds.
Ingredients
You will need:
- 4 chickens (about 500 g each)
- 2 handfuls of mint leaves
- 4 tablespoons of brown sugar
- 100 ml of white rum
- 6 limes
- 1 pink grapefruit
- 100 ml of extra virgin olive oil
- 4 thick slices of stale bread
- 4 cloves of garlic
- Salt and pepper to taste
Preparation

Let’s start with the oven: preheat it to 180°C (350°F) and prepare a baking tray lined with parchment paper. Then, grab the limes. Wash them thoroughly and dry them, grate the zest of four of them, squeeze them to get fresh juice, and slice the remaining two. Don’t forget the grapefruit: wash it and cut it into wedges without removing the peel.
Now, let’s tackle the bread and garlic. Cut the bread into cubes of about 2 cm and peel the garlic, slightly crushing the cloves. Now comes the fun part: the mojito sauce. Take a mortar and pestle and crush the mint with the brown sugar until you get a fragrant paste. Add the rum, olive oil, lime zest, and juice, a pinch of salt, and a generous sprinkle of pepper. Mix everything carefully.
It’s time for the chickens. Season them with salt and pepper inside and fill them with a garlic clove, half a squeezed lime, and some bread cubes that you’ve already soaked in the mojito sauce. Tie the chickens with kitchen string and place them on the baking tray. Season with salt, pepper, and a drizzle of olive oil. Arrange the lime slices and grapefruit wedges around them.
Put everything in the oven and let it cook for 45-50 minutes, remembering to occasionally baste them with their cooking juices. After 35-40 minutes, add the remaining bread cubes to make them crispy. When the chickens are ready – check by inserting a toothpick into the thigh; if the liquid runs clear, they are perfect – serve them with the cooking juices and crispy bread cubes. If you like, you can accompany them with basmati rice seasoned with butter, lime juice, and zest.
