Shrimp lasagna, zucchini, buffalo mozzarella and pesto with flax seed grains

Freshness! It’s everything you want in this hot summer start! Winter dishes are too heavy for this period. All you might want is an inviting, greedy, but above all light dish! That’s why I decided to share with you a recipe that I recently discovered: lasagna prawns, zucchini, buffalo mozzarella and pesto with flax seed grain. A dish with many ingredients, all united by the fact that they are very summery.

It is a different dish than usual, which apparently may seem complicated to do. You will discover continuing with the reading that it is not at all but that on the contrary, it is quick and fun to prepare. The final result will be surprising!

Ingredients

• 400 gr of lasagna ready to egg

• 300gr of zucchini

• 300gr of prawns

• 450gr of buffalo mozzarella

• 200ml of béchamel sauce

• Genoese pesto without garlic

•flax seed

•oil

•onion

• carrots

•pepper

•salt

Method

Wash and cut the zucchini into cubes. Sauté in a pan in a sauté of oil, onion and carrots. Add salt and pepper and cook for about ten minutes.

Take the prawns, remove the head and shell and cook for a few minutes together with the zucchini. Cut the mozzarella di bufala into slices and put them to dry on paper towels. Once dried thoroughly, cut into smaller pieces.

Blanch the lasagne pasta sheets in boiling water for a few minutes and start with the inside of a baking dish with one of them.

Form the first layer starting with the filling of shrimp and zucchini, continuing with the mozzarella and then a bit of béchamel.

We complete the first layer of lasagna 6/7 teaspoons of pesto for each layer.

Continue in the same way for 3 or 4 times.

The last layer of lasagna must remain uncovered. Put all the ingredients of the filling except for the pesto: shrimp, zucchini, mozzarella and bechamel. Sprinkle the whole surface of the lasagna with flax seeds.

Bake at 200 degrees for about 25/30 minutes. At this point your lasagna is ready to taste!
