enolike - Spaghetti con Salsiccia, Pomodoro e Formaggio

Hello, today we have Spaghetti with Sausage, Tomato, and Cheese; yes, Elisa with her wonderful recipes isn’t here, but I am with my simple yet incredibly tasty one that you can make with a few ingredients you probably already have in your pantry. We’re talking about a dish of spaghetti with sausage, tomato, and cheese that will delight your palate and that of your guests.

Ingredients for 4 people

  • 400g Spaghetti
  • 4 Sausages
  • 400g Cherry Tomatoes
  • Fontina and Grana Cheese
  • 1 Lemon
  • Olive oil
  • Salt and Pepper

Preparation

Spaghetti con Salsiccia, Pomodoro e Formaggio
The ingredients

Let’s start by dicing the tomatoes and crumbling the sausage. Grate the Grana cheese and cut the Fontina into cubes. Bring a pot of salted water to a boil and immerse the spaghetti until they reach the perfect al dente texture. This step is crucial to ensure that the pasta absorbs the sauce well.

Now, let’s move on to the sauce. In a pan, heat a drizzle of olive oil and add the sausage, browning it until golden. It’s time to add the diced tomatoes, which will become juicy and delicious with the heat. A splash of lemon juice will bring freshness to the dish, while salt and pepper will enhance the flavor.

Drain the spaghetti and add it to the sauce in the pan. Add the cubes of Fontina and half of the Grana cheese, stirring until the cheeses melt and create a delicious cream.

Plate the spaghetti and sprinkle with the remaining Grana cheese. If you love vibrant flavors, add another splash of lemon juice.

Wine Pairing

To best pair with the spaghetti dish with sausage, tomato, and cheese, I recommend choosing a fresh and aromatic white wine like the Traminer from Borgo delle Oche, or a young and fruity red wine like the Pinot Nero Junior from the Monsupello winery.

Buon appetito e alla prossima ricetta

ciao

Monica
