Pepper and mozzarella rolls


Today we cook an easy recipe perfect for the summer, pepper and mozzarella rolls. This recipe goes well with your aperitifs or as the main dish for your lunches and dinners. Light but tasty and very refreshing!

Ingredients for four people

  • yellow and red peppers
  • 2 tomatoes
  • 2 mozzarell
  • 12 anchovy fillets in oil
  • Oregano
  • salt


Clean the peppers and cut them into four segments for a total of twelve wedges. Dry them well with kitchen paper.

Heat a pan you use to grill meat or vegetables and, once it’s nice and hot, grill the pepper segments for at least 4 minutes on each side. They should become nice and soft. Once cooked, place the peppers on a plate and leave them to cool.

Cut the tomatoes into wedges, removing the seeds; cut the mozzarella into wedges and let it drain; also drain the anchovy fillets.

And now we can compose our rolls. Take a slice of pepper, layer the mozzarella, then the tomato and the anchovy. Finish with a pinch of oregano. Roll everything up and close with a toothpick.

Let it rest in the fridge for an hour and, they are ready to taste.

Wine Pairings

With this dish, you need a white wine, I suggest a fresh wine such as Pinot Grigio or Sauvignon. If you want something different, I recommend the Vermentino di Gallura Surrau.
