Cupcakes with walnuts, courgettes and Grana Padano mousse

How about turning on the oven for 30 minutes?

Today I share with you my salty cupcakes recipe. In my dad’s garden I found some zucchini ready to be picked so I decided that today, instead of stuffing them with meat, I will use its pulp in the filling.

The recipe is quick, few ingredients are needed. So run to get them.

 

Ingredients for 4 people

  • 100 g  Grana Padano
  • 150 g  flower 00
  • 140 g  zucchine
  • 1 dl milk
  • 50 g kernels of red walnuts
  • 8 g yeast for savory pies
  • 2 eggs
  • 20 g butter
  • extra virgin olive oil
  • nutmeg, salt and pepper

for the mousse:

  • 1 dl fresh cream
  • 100 Grana Padano
  • 5 g gelatin in leaves

Preparation

Shell the boiled eggs, add a pinch of salt, pepper and nutmeg, milk, half the oil and mix. After washing the courgettes, grate them and add them to the mixture.

Put the walnuts in a spoon of flower and finely chop them; add them to the remaining flour that you have previously mixed with the baking powder; include the Grana and mix with the egg mixture. Divide the mixture obtained in 12 and put them on the muffin molds after having greased and floured them and bake in the oven at 180 ° for 25 minutes.

Prepare the mousse by soaking the gelatin in cold water for 15 minutes. Heat the cream when it starts boiling, squeezed the gelatin of the water and added it to the cream. Add also the 80 g of grated Grana Padano and mix for few minutes (until the composte is smooth). Allow the mousse to cool in the fridge until it begins to bind. Spread it on the muffins and decorate with some Grana flakes.
