Instructions

Start by finely crushing the digestive biscuits and mixing them with the melted butter. Take a springform pan about 22 cm in diameter, line it with parchment paper, and spread the biscuit mixture on the bottom, pressing well to form a compact base. Place it in the refrigerator to chill for at least half an hour.
Meanwhile, soak the gelatin sheets in cold water for about ten minutes. In a bowl, mix the Greek yogurt with powdered sugar until you get a smooth mixture. Heat 50 ml of cream and dissolve the well-squeezed gelatin in it. Whip the remaining cream and gently fold it into the yogurt mixture, then add the gelatin mixture and mix well.
Now, take the biscuit base from the fridge and pour the yogurt cream over it, leveling the surface with a spatula. Refrigerate to solidify for at least four hours.
For the topping, cook the berries with sugar and lemon juice in a small pot for about 5-7 minutes, until you get a thick sauce, then let it cool completely.
