The Rebula – Ribolla Gialla from the Edi Simčič winery
Rebula wine, also known as Ribolla Gialla, is one of the most fascinating and historic varieties cultivated in the Collio Goriziano region, on the border between Italy and Slovenia. The Edi Simčič winery, located in the heart of the Brda region, is renowned for producing high-quality wines, and their Rebula is no exception. This wine showcases a medium deep golden color with slight orange hues, reflecting the attention and care dedicated to the winemaking process.
The Winemaking
The winemaking of Rebula at the Edi Simčič winery follows traditional methods combined with modern techniques to highlight the unique characteristics of the grape variety. After harvesting, the grapes are gently pressed, and the must is fermented in oak barrels to achieve a balance between freshness and complexity. The fermentation process is carefully controlled to preserve the typical aromatic notes of Rebula, such as ripe yellow apple and dried apricot. The aging process in oak barrels adds subtle woody notes that enrich the wine’s aromatic profile.
Tasting the wine of the winery
On the nose, Edi Simčič’s Rebula presents a youthful and somewhat restrained bouquet, opening with delicate notes of ripe yellow fruits, bread crust, and yeast. On the palate, it is dry with moderately high acidity, which, along with a slightly buttery texture and medium body, gives the wine a solid structure. The aromatic profile, similar to the nose, is delicate and well-defined, expressing tension and savory flavors. With aeration, the wine gains complexity, offering an unexpectedly long and salty aftertaste.
Food Pairings
Edi Simčič’s Rebula is an extremely versatile wine in terms of culinary pairings. Thanks to its refreshing acidity and flavor profile, it pairs particularly well as an aperitif or at the start of a meal. It complements fish dishes beautifully, especially those with light sauces, and white meats. Fresh cheeses and vegetarian dishes featuring grilled vegetables also find an ideal companion in this wine. Its ability to enhance the flavors of food makes it an excellent choice for those who enjoy experimenting with new gastronomic pairings.
THE WINERY
The story of Edi Simčič Winery began between the 1960s and 1980s, when Marica and Edi Simčič passionately cultivated 3.5 hectares of vineyards while also working at the Dobrovo Agricultural Cooperative. In 1989, they celebrated a milestone by bottling their first wine, producing 3,000 bottles. With the generational transition, their son Alex took over the business in the 1990s, setting a clear direction and laying the foundations for the family brand. What started as a small home cellar gradually transformed into a modern production facility. Today, the story continues with the third generation: Alex’s sons, Jure and Jakob, are already key players in the family business… keep reading
