The Rebula Wine from Dobuje Winery
The Rebula wine from Dobuje Winery has deep historical roots in the village of Snežeče, located in the Collio region. It is here that Rebula was first mentioned, in a place where viticulture has thrived since the Middle Ages. Historical documents, like the Briški zbornik, attest that as early as 1336, Count Anzio of Snežeče sold part of the Ribolla-producing vineyards to Henry of Rittersbergo. These vineyards were located on the hills around the Church of Santa Maria Nevea, where Dobuje Winery’s Rebula vines still flourish today. This centuries-old wine-making tradition is reflected in the high-quality wines produced by the winery, representing a perfect blend of history and modernity.
The Winemaking
The production of Rebula at Dobuje Winery is a meticulous process that begins with the manual harvesting of grapes from vineyards aged between 12 and 35 years. The skin maceration lasts 12 hours, followed by pressing and fermentation in stainless steel containers. The wine matures on fine lees until April before being racked and further matured in steel. Partial malolactic fermentation is conducted, adding complexity to the wine. This traditional and sustainable winemaking methodology preserves the typical characteristics of the Rebula variety, ensuring a final product of great elegance and refinement.
Tasting the wine of the winery
Dobuje Winery’s Rebula presents a bright straw-yellow color with golden reflections. On the nose, the wine expresses notes of white-fleshed fruit, such as pear and apple, integrated with floral and mineral hints. On the palate, there is a lively freshness, supported by a well-balanced acidity and a harmonious structure. The presence of lees imparts a slight creaminess to the wine, while the partially malolactic fermentation enriches the aromatic profile with notes of butter and vanilla. The taste persistence is long and pleasant, with a mineral finish that invites another sip.
Food Pairings
The Rebula wine from Dobuje Winery lends itself to numerous culinary pairings due to its versatility and complexity. It is ideal with fish dishes, like oven-baked sea bass or seafood risotto, enhancing their flavors without overpowering them. It also pairs well with appetizers of cured meats and fresh cheeses, or with vegetarian dishes like grilled vegetables. Its freshness makes it a perfect accompaniment for Mediterranean cuisine, while the recommended serving temperature of 12°C enhances its organoleptic qualities. This wine is an excellent choice for those wishing to explore the authentic flavors of the Collio region through a glass of history and tradition.
