The Chardonnay from the Edi Simčič winery
The Chardonnay from Edi Simčič winery is a highly refined white wine from the Slovenian wine region of Collio. This winery is renowned for its dedication to quality and for producing wines that express the character of the territory. Their Chardonnay is considered an excellent example of how this variety can be interpreted with elegance and complexity. Characterized by an intense golden color, this wine offers a sensory journey through its aromatic and gustatory notes, always maintaining a balance between structure and freshness.
The Winemaking
The winemaking process for Edi Simčič’s Chardonnay involves careful selection of grapes from a single vineyard in the village of Kozana. The grapes are hand-picked to ensure the highest quality and then undergo a precise fermentation process. The wine is aged in oak barrels, which impart elegant woody notes while maintaining a clean aromatic profile. This aging process is essential to develop the wine’s deep aromatic complexity and oily texture, without overshadowing its varietal characteristics.
Tasting the wine of the winery
During tasting, Edi Simčič’s Chardonnay presents itself with an intense golden-yellow color. On the nose, it is slightly reserved but complex, with hints of ripe fruit such as peach and pear, along with spicy and toasted notes from oak aging. On the palate, the wine is dry, medium to full-bodied, with good acidity that supports the overall structure. The texture is oily, and the flavor is more intense than perceived on the nose, with hints of flowers and wet stone. The finish is long, gently salty, and leaves a persistent sense of elegance.
Food Pairings
This Chardonnay pairs magnificently with a variety of dishes. Its complexity and full body make it ideal for accompanying grilled fish, shellfish, and pasta dishes with creamy sauces. The buttery and nutty notes also make it an excellent companion for white meats, such as chicken or turkey, especially when prepared with herbs and citrus. For a bolder pairing, it can be tried with aged cheeses, which enhance the wine’s structure and aromatic depth.
THE WINERY
The story of Edi Simčič Winery began between the 1960s and 1980s, when Marica and Edi Simčič passionately cultivated 3.5 hectares of vineyards while also working at the Dobrovo Agricultural Cooperative. In 1989, they celebrated a milestone by bottling their first wine, producing 3,000 bottles. With the generational transition, their son Alex took over the business in the 1990s, setting a clear direction and laying the foundations for the family brand. What started as a small home cellar gradually transformed into a modern production facility. Today, the story continues with the third generation: Alex’s sons, Jure and Jakob, are already key players in the family business… keep reading
