The Winemaking
The winemaking of Rossese di Dolceacqua Superiore Luvaira is a meticulous process that enhances the innate qualities of the grapes. A portion of the grapes is left undestemmed, varying between 50% and 60% depending on the year, to preserve greater structure and complexity. Fermentation occurs on the skins for about 12-15 days at a constant temperature of 26-28°C. This method allows for optimal extraction of aromas and tannins, giving the wine a robust yet balanced body. Subsequently, the wine matures for 12 months in steel tanks and further refines for 8 months in the bottle, developing an aging potential over 10 years.
