The Winemaking

The grapes, from vineyards with a south/east exposure on schist, clay, and limestone soils, are carefully harvested. A portion of the grapes is not destemmed, with percentages varying from 50% to 60%, depending on the vintage. This choice adds greater aromatic and structural complexity to the wine. Fermentation occurs on the skins for about 12-15 days at a controlled temperature between 26° and 28°C, allowing optimal extraction of the Rossese’s delicate aromas and tannins. Aging continues for four months in steel tanks and eight months in acacia tonneaux, followed by an additional three months in the bottle, ensuring a balanced and harmonious wine.
