The Winemaking
The production of Sauvignon begins with a manual harvest of the grapes at the beginning of September, a crucial time to ensure the quality of the final product. The grapes are collected in crates, thus preserving the integrity of the bunches. After harvesting, the grapes undergo a soft pressing to extract the must, a fundamental step in the winemaking process. A portion of the must is subjected to cold maceration at 5°C for 7-8 hours to enhance the varietal aromas. Subsequently, cold static decantation is carried out, and the must is initiated for fermentation at a controlled temperature of 13-14°C. The wine is left to rest on the lees until spring, the time of bottling, and then aged in the bottle for several months. This meticulous process ensures that the Sauvignon develops its distinctive characteristics.
