The Winemaking
The production of Moscato Rosa begins with a two-phase harvest. The first phase occurs in mid-September, and the grapes are set to dry. The second phase involves a late harvest for the remaining grapes. The whole grapes are destemmed and undergo soft pressing. The dried part undergoes maceration for 2-3 days. After maceration, the must is cold-settled. Subsequently, the must is decanted to initiate fermentation. Fermentation occurs with selected yeasts at a temperature of 16°-18°C. The wine matures on noble lees in stainless steel tanks until spring.
