The Merlot from Cantina Sosol is an elegant and authentic wine, a true expression of the Collio region, located on the border between Italy and Slovenia. Produced in limited quantities, this wine stands out for its quality and the artisanal care taken at every stage of production. With its intense and harmonious character, it pays homage to local winemaking traditions, reinterpreted with a modern vision.
Cantina Sosol was founded in 2019 in Oslavia, thanks to the entrepreneurial spirit of Ivan Sosol, who revived the vineyards of his grandfather, Milano Gravner. Starting with an initial production of 2,500 bottles, the winery has grown to 15,000 bottles per year, all while maintaining an artisanal approach that respects its roots. Ivan has chosen to invest in the vineyards, mechanization, and experimentation, aiming to become a reference point for wine enthusiasts of the Italian Collio region.
The Winemaking
The Merlot grapes, harvested from 25-year-old vines trained in the Guyot system, are picked at full ripeness to ensure maximum concentration. The winemaking process involves maceration on the skins in vats for about 16 days, with repeated manual pump-overs (at least 4 times a day). This method ensures optimal extraction of aromas, color, and structure. The wine is then aged for 14 months in 500-liter oak barrels, followed by additional aging in stainless steel for 6-12 months before bottling.
Tasting the Merlot
Cantina Sosol’s Merlot reveals an intense ruby red color with garnet reflections. On the nose, it offers aromas of ripe red fruits such as cherry and blackberry, complemented by spicy notes of vanilla and cocoa. On the palate, it is smooth, enveloping, and well-balanced, with velvety tannins and a pleasant acidity that adds freshness. The finish is long and harmonious, with a lingering aftertaste of spices and wood.
Food Pairings
This Merlot pairs perfectly with red meat dishes such as roasts and braised meats. It is excellent with game, including wild boar or venison, and aged cheeses like Montasio or Parmigiano Reggiano. It also complements flavorful first courses, such as pappardelle with duck ragù. Serve at a temperature of 16-18°C to enhance all its characteristics.

The Sosol Agricultural Company was founded in 2019 in Oslavia by Ivan Sosol, a young entrepreneur determined to carry on the legacy of his grandfather, Milano Gravner.
