The wine Bakren from Sosol winery
Bakren wine from the Sosol winery is an authentic expression of the Oslavia region, a small locality in the Collio area, bordering Slovenia. This winery, founded in 2019 by Ivan Sosol, is distinguished by its innovative approach and respect for family traditions. Ivan decided to revive his grandfather Milano Gravner’s vineyards, paying homage to traditional techniques and the unique terroir of the region. Bakren embodies a philosophy of returning to one’s roots, with a particular focus on quality and authenticity.
The Winemaking
The winemaking process for Bakren is meticulous, aiming to extract the fullest potential from the Pinot Grigio grapes. The grapes come from 40-year-old vineyards cultivated using the Guyot method and are harvested at high maturity, depending on weather conditions. The maceration on the skins lasts 2-3 days, a crucial step in developing complex aromas, tannins, and the characteristic copper color. After gentle pressing, the wine is aged exclusively in stainless steel, avoiding wood to preserve the wine’s purity and elegance.
Tasting the Merlot
Upon tasting, Bakren reveals an intense copper color, which is the origin of its name, as “Bakren” means “copper” in Slovenian. On the nose, it offers a complex bouquet of fruity and floral aromas, with notes of peach, apricot, and white flowers, accompanied by a light spiciness. On the palate, the wine is elegant and smooth, with a well-balanced structure and a pleasant persistence. The presence of fine tannins and lively acidity adds freshness and length to the finish.
Food Pairings
Bakren is a versatile wine, ideal for accompanying a variety of dishes. Its structure and complexity make it perfect for pairing with appetizers such as cured meats and aged cheeses. It also pairs well with fish-based first courses, like risottos and pastas with seafood, and with white meat dishes. For those looking to experiment, it can be paired with Asian cuisine, where the spices find a perfect balance with the wine’s freshness and smoothness. Each sip of Bakren tells the story of a winemaking tradition that looks to the future with passion and innovation.
