The Fausto wine from Cantina Spolert
The Fausto Riserva from Cantina Spolert is crafted from a blend of 50% Chardonnay and 50% Malvasia Istriana grapes, cultivated in their own vineyards located on the hills of Prepotto in Friuli Venezia Giulia. Even the label is quite special; it features mythological figures because this wine is truly a legend!
The estate, encompassing approximately 8 hectares of land, is located in the historic village of Prepotto, between the Natural Park of the Julian Pre-Alps and the Riviera of the Upper Adriatic. We are talking about one of the dominant grape varieties in the Colli Orientali del Friuli, the Schioppettino di Prepotto.
The company is historic, but only in recent years has there been a significant management change that has led to a refinement in style and quality. Riccardo, the new young owner, did not inherit the place; he chose it out of passion with the aim of giving strong emphasis to enological tradition and thus fully respecting the expression of the territory.
VINIFICATION
Due to the extreme sensitivity to environmental impact and sustainability, the grapes are hand-harvested in crates in various stages towards the end of September. Once in the winery, the grapes are destemmed, and only the best berries are selected and crushed. A portion of the must is left in contact with the skins for a short period. After racking, it is transferred to cement tanks where fermentation takes place. The wine is aged for about 12 months in a clay amphora; after blending and bottling, the wine rests for another 6 months in the cellar before being released to the market.
Tasting the blend of Chardonnay and Malvasia from Spolert
It has an intense golden-yellow color. On the nose, it is fine and refined with pleasant notes of green apple intertwined with hints of pineapple, finishing with nuances of white flowers. Fresh and elegant on the palate, the Fausto from Cantina Spolert is a well-structured wine with excellent sapidity and an almost perfect correspondence between aromas and flavor. The persistence is excellent as well.

This wine pairs well with fish and white meats. It is worth trying with a flavorful fish soup.
THE WINERY
We are visiting Spolert in Prepotto in the north east of Friuli Venezia Giulia. A new winery that the current owner (Riccardo Caliari) and his wife bought three years ago.
Riccardo’s main objective is to enhance the native wine and the local customs; this is the reason why he chose Spolert as the name of his winery. Spolet in the Friulian tradition was the center of the kitchen used for cooking food, but also to spread heat throughout the house.
