The Črno from Dobuje Winery
The Črno wine from the Dobuje winery is a precious example of tradition and character from the BRDA region in Slovenia. This red wine, named after the Slovenian word for “black,” is a perfect blend of Merlot and Cabernet Sauvignon. The grapes come from vineyards aged between 9 and 12 years, cultivated on opoka (ponca) soil at an altitude of 110-130 meters above sea level. Protected by the ZGP geographical designation, Dobuje’s Črno expresses the authenticity of the territory, combining natural and traditional cultivation methods.
The Winemaking
The winemaking process for Črno begins with a manual harvest of the grapes, carried out at the end of September. The grapes are destemmed and crushed, followed by a classic 17-day maceration in open vats, with manual cap punching. This process enhances the extraction of color and flavors. Subsequently, the wine matures on fine lees for ten months in stainless steel tanks, followed by an additional six months of aging in large oak barrels. Malolactic fermentation is carried out to soften the wine and improve its balance. Finally, the wine is bottle-aged for 4-6 months, reaching an alcohol content of 13.5%.
