The Winemaking
The winemaking process for Sivi Pinot begins with a manual harvest, carried out at the end of August. The grapes, from vineyards aged between 10 and 28 years, undergo a 12-hour cryomaceration. This process allows for the extraction of intense aromas and flavors. After pressing, the must ferments in stainless steel tanks, using a blend of indigenous and selected yeasts. The wine matures on fine lees for seven months, a technique that enriches its aromatic profile. Partial malolactic fermentation is conducted to perfect the balance between acidity and smoothness. After racking, the wine matures further before bottling, followed by 4-6 months of bottle aging.
