The Winemaking
The production of the Sauvignon Blanc at Dobuje Winery is a meticulous process that begins with the manual harvesting of grapes from vineyards aged between 10 and 30 years. After destemming, the grapes undergo a 6-hour skin maceration at low temperatures, a process known as cryomaceration, which helps extract the distinctive aromas and flavors of the grape variety. Subsequently, the must is pressed and placed in stainless steel containers for fermentation, which occurs with the inoculation of indigenous and selected yeasts. The wine matures for 7 months on fine lees, followed by a bottle aging period of 4-6 months. The malolactic fermentation is partially completed, contributing to the balance between acidity and softness in the final wine.

Upon tasting, the Dobuje Sauvignon Blanc presents an alcohol content of 14.00% and a total acidity of 5.95 g/l, providing the wine with a vibrant and well-balanced structure. The nose is rich with characteristic aromas of Sauvignon Blanc, featuring notes of exotic fruits, citrus, and hints of aromatic herbs. On the palate, one perceives a complexity of flavors ranging from the freshness of fruity notes to the minerality of the original soil. The finish is long and persistent, with a slight hint of hazelnut derived from prolonged contact with the lees.
