The Sauvignon Sagré from the Castello di Spessa winery is a white wine produced in the historic estate of Castello di Spessa, located in the heart of the Friuli Venezia Giulia region, renowned for its winemaking traditions and the quality of its terroirs. This Sauvignon Blanc stands out for its fresh and aromatic character, representing one of the most appreciated varieties in the area.

The Winemaking

The grapes are hand-harvested to ensure the selection of the best bunches. After harvesting, the grapes undergo gentle pressing to extract the must. Fermentation and ageing occur in temperature-controlled stainless steel tanks to preserve the fresh and fruity aromas typical of the variety. The wine matures on fine lees until the end of March before bottling.

Tasting the wine of the winery

It displays a bright straw-yellow colour with greenish reflections. On the nose, it offers an intense and complex aromatic bouquet with notes of citrus, grapefruit, and tropical fruits, complemented by a slight herbaceous note typical of the variety. The wine is fresh and lively on the palate, with good acidity that provides balance and pleasant persistence. The fruity aromas re-emerge, making each sip refreshing and inviting.

This Sauvignon Blanc is well-suited for numerous gastronomic pairings; it is ideal with fish dishes, such as carpaccio, sushi, and shellfish. It also pairs excellently with light appetizers, salads, and vegetable-based dishes.
