The winemaking
Ostine is made from 100% Malvasia grapes, a variety known for its versatility and ability to express the characteristics of the terroir. The vinification is primarily done in steel, with 10% of the must fermenting in wood, enriching the wine with aromatic complexity. After fermentation, the wine is aged on fine lees for six months in steel, with an additional 20% maturing in barrique. This aging method gives the wine a refined structure and depth of flavors, maintaining a balance between freshness and complexity.
