The Malvasia from Doro Princic Winery
The Malvasia from Doro Princic Winery is a white wine of great elegance, embodying the winemaking tradition of the Collio Goriziano region at its best. Made exclusively from Malvasia Istriana grapes, this wine expresses the unique characteristics of the Friulian terroir, offering a tasting experience that combines complexity and freshness. Located on the hills surrounding the winery in Cormòns, the vineyards enjoy a predominantly southeast exposure, ideal for optimal grape maturation.
The Winemaking
The harvest is conducted manually, selecting grapes at perfect ripeness during the coolest hours of the morning. This process ensures the highest quality and integrity of the fruit. In the winery, the grapes undergo gentle pressing, and the free-run juice, after an initial racking, is placed in fermentation tanks at controlled temperatures. The wine is aged on fine lees for at least 8 months, enhancing its aromatic complexity and rich structure.
Tasting the wine of the winery
The Malvasia Etichetta Blu presents a straw-yellow color with greenish highlights. On the nose, the bouquet is broad and aromatic, evoking notes of apricot and peach, with a delicate hint of rose. On the palate, the wine is distinguished by its fragrant and enveloping flavor, with a finish reminiscent of apple. Its freshness and minerality make it persistent and pleasantly balanced.
Food Pairings
This wine is particularly suited to accompany fish appetizers and stewed fish dishes. Its versatility also makes it suitable for white meats and first courses based on vegetables. Served at a temperature of 10-12°C, the Malvasia Etichetta Blu from Doro Princic is ideal for enriching the tables of elegant and convivial dinners, offering a sensory experience that highlights the distinctive qualities of Collio’s white wines.
