The Defi De La Tour from Villa Russiz Winery
The Defi De La Tour from Villa Russiz Winery is a prestigious cru wine, produced in limited bottles only in the best vintages from Cabernet Sauvignon grapes. This wine stands out for its elegance and complexity, representing a perfect balance between tradition and innovation. The geographical location of the vineyards, situated on a south-facing hill, contributes to creating the ideal conditions for the cultivation of high-quality grapes.
The Winemaking
The harvest takes place in early October, with a rigorous selection of grapes, hand-picked at the peak of ripeness. Once in the winery, the berries are separated from the stems and undergo fermentation. The maceration lasts about 20 days, allowing the extraction of noble tannins and aromatic substances. Subsequently, the wine matures in small French oak barrels for about 35-36 months, refining its organoleptic characteristics before being bottled and left to rest for an additional 10 months in the cellar.
Tasting the wine of the winery
The Defi De La Tour presents itself with an intense ruby red color, tending towards violet. On the nose, it offers a complex and enveloping bouquet, with notes of spices and aromas of great intensity. On the palate, the wine is characterized by soft and well-integrated tannins, which provide an elegant and persistent structure. It is a balanced and pleasant wine with a long and lingering finish.
Food Pairings
This wine pairs perfectly with fine grilled cuts, game, and wildfowl, enhancing the robust flavors of these dishes. Additionally, the Defi De La Tour is also suitable as a meditation wine, ideal for accompanying moments of reflection and conviviality. Its complexity and depth make it a perfect companion for special occasions.
