The Winemaking
The winemaking of Ribolla Gialla begins with the pressing of whole grapes, a process that yields a high-quality free-run must. This must is statically decanted at cold temperatures; subsequently, selected yeasts are added to initiate a slow fermentation in stainless steel tanks at controlled temperatures between 16° and 18°C. After fermentation, the wine is racked and left on fine lees until spring, with frequent bâtonnage to give the wine a rich and full texture.
Tasting the wine
Ribolla Gialla presents itself with a delicate yellow color and lively greenish reflections, a clear expression of its youth. On the nose, delicate and fresh aromas are perceived, with slightly citrusy and floral notes on a discreet mineral background. On the palate, the wine is fresh, savory, and dry, confirming the decisive minerality characteristic of wines derived from this grape variety. The winery Simon Komjanc is located in the heart of the hills of San Floriano del Collio, specifically in the Valerisce area, within the renowned D.O.C. Collio, famous for its excellent wine production. With a total area of 20 hectares, of which 11 are dedicated to vineyards, the company produces an average of 600 hectoliters of wine, mainly distributed in Italy.
