The Winemaking
The winemaking of Pinot Bianco begins with the pressing of whole grapes, a process that yields a high-quality free-run must. This must is statically decanted at cold temperatures; subsequently, selected yeasts are added to initiate a slow fermentation in stainless steel tanks at controlled temperatures between 16° and 18°C. After fermentation, the wine is racked and left on fine lees until spring, with frequent bâtonnage to give the wine a rich and full texture.

The Pinot Bianco presents itself with a pale and deceptively subtle straw yellow color, enriched with lively reflections. The clarity is excellent, and the brightness is remarkable. On the nose, the wine opens with fruity notes of apple and pear, accompanied by floral nuances of jasmine, hawthorn, and linden. Delicate spicy notes of white pepper and mineral hints follow.
