The Winemaking
The winemaking of Pinot Grigio begins with the pressing of whole grapes, a process that yields a high-quality free-run must. This must is statically decanted at cold temperatures; subsequently, selected yeasts are added to initiate a slow fermentation in stainless steel tanks at controlled temperatures between 16° and 18°C. After fermentation, the wine is racked and left on fine lees until spring, with frequent bâtonnage to give the wine a rich and full texture.
Tasting the wine
Pinot Grigio presents itself with a light straw yellow color, enriched by a barely perceptible touch of copper pink that makes its appearance particularly captivating. The clarity is impeccable, with lively reflections and perfect brightness. On the nose, the wine offers good intensity with dominant fruity aromas, including apple, pear, and notes of tropical fruits such as banana and a hint of papaya. On the palate, the wine starts dry but with good roundness, evolving into acidic and savory freshness. It is a wine of excellent craftsmanship with a promising future.
Food Pairings
Ideal for accompanying sauced, baked, or grilled fish, it also pairs perfectly with cured meats that have a balanced fatty component. Its versatility makes it suitable for multiple occasions. The winery Simon Komjanc is located in the heart of the hills of San Floriano del Collio, specifically in the Valerisce area, within the renowned D.O.C. Collio, famous for its excellent wine production. With a total area of 20 hectares, of which 11 are dedicated to vineyards, the company produces an average of 600 hectoliters of wine, mainly distributed in Italy.
