The Verduzzo from Sara & Sara Winery
The Verduzzo from Sara & Sara Winery is crafted entirely from Verduzzo grapes, cultivated in their estate-owned vineyards located in Savorgnano in Torre, Udine. These vineyards, situated between 180 and 350 meters above sea level, feature hilly terrain rich in marl and sandstone, imparting a distinctive mineral complexity to the wine.
The winery employs a fully organic approach, ensuring environmental sustainability from the vineyard to the cellar. No herbicides are used; only grass cutting and natural methods are employed for land protection. The wines are free from clarifications or stabilizers, relying on natural decantation, and some wines are not even filtered. Production is limited to 3500 bottles per year, making this wine an exclusive choice for enthusiasts.
The winemaking
The grapes undergo an on-vine drying process lasting between 30 and 40 days, after which they are hand-picked and placed in small crates. Once in the winery, the whole grapes undergo gentle pressing followed by decantation lasting at least 24 hours. Fermentation occurs at natural temperatures, using only natural yeasts. The wine ages for at least 10 months in stainless steel tanks and, after bottling, rests for an additional 5 months in the cellar before being released to the market.
Tasting Sara & Sara’s Wine
The Verduzzo reveals an enchanting golden yellow color. On the nose, it is delicate, with pleasant fruity notes, including distinct hints of apple, pear, and touches of apricot. On the palate, it is sweet but not cloying, slightly tannic, with a perfect match between aromas and flavor. The persistence is remarkable, leaving a lasting and pleasant impression.
Food Pairings
This is a typical dessert wine, perfect for pairing with dry pastries. When aged, it also pairs interestingly with aged cheeses. An excellent pairing to try is with the apple mustard from Luchino Vittoria, offering a sophisticated and memorable gastronomic experience.
