The Refosco of the Sara & Sara winery
The Refosco dal Peduncolo Rosso from Sara & Sara is a wine that fully expresses the character of the region, crafted from pure Refosco grapes grown in their own vineyards in Savorgnano in Torre, Udine. Located at altitudes between 180 and 350 meters, these vineyards benefit from hilly terrain rich in marl and sandstone, imparting a unique mineral complexity to the wine.
Sara & Sara Winery adopts a completely organic approach, ensuring environmental respect from vineyard to cellar. Herbicides are not used; only grass cutting and natural methods are employed for land protection. In the winemaking process, clarifications and stabilizers are avoided, focusing on natural decantation, and some wines are not even filtered. Production is limited to 2000 bottles per year, making each vintage exclusive.
The Winemaking
The grapes are carefully hand-harvested and, once in the cellar, are pressed and left to macerate in large oak vats for about 20 days. Fermentation occurs at natural temperatures using only selected yeasts. Frequent pump-overs ensure optimal color extraction and complete fermentation. The wine ages for 18 months in oak barrels, with fermentation lees periodically kept in suspension, developing a complex structure and rich aromatic profile. After bottling, the wine rests for an additional 4 months in the cellar, refining its character before being introduced to the market.
Tasting the wine by Sara & Sara
The Refosco presents an intense red color with violet hues. On the nose, it is elegant, with pleasant aromas of red fruits, predominantly blackberry, intertwined with herbal notes that close with spicy hints and whiffs of licorice. On the palate, it is robust and full, with tannins that are present yet silky and well-integrated. There is a good correspondence between the aromas and flavor, with remarkable persistence leaving a lasting impression.
