The wine then undergoes malolactic fermentation, enriching it with softness. Skin maceration, lasting from three weeks to three months, allows optimal extraction of polyphenols, giving the wine soft and evolved tannins. Aging takes place in barriques for about 24 months, followed by an additional 12 months in the bottle. This process helps define a complex and articulated aromatic profile, where the senses of smell and taste harmoniously interact.
