The Merlot Voos dai Ciamps from Vie Di Romans Winery
Voos dai Ciamps from the Vie di Romans winery is a dry red wine, 100% Merlot, representing the excellence of the Friuli Isonzo Rive Alte wine production. Located in the municipality of Mariano del Friuli, this wine is the result of a unique terroir and meticulous winemaking aimed at highlighting the varietal characteristics of Merlot. The quality of “Voos dai Ciamps” is reflected in its complexity and structure, making it a wine with a high aging potential and a peak evolution extending up to 22 years.
The Winemaking
The winemaking process for Voos dai Ciamps is meticulous, starting with grape harvesting on September 30, 2020. After destemming and crushing, the grapes undergo a 28-day maceration with punch-downs and délestage in stainless steel fermentation tanks. Alcoholic fermentation takes place at temperatures between 18 and 30 °C, using selected yeasts for 12 days. Malolactic fermentation is completed, contributing to the wine’s smoothness. After an 18-month élevage in barriques, the wine rests for an additional 8 months in stainless steel tanks until natural clarification is achieved. Bottling occurs on December 29, 2022, followed by a 14-month bottle aging.
Tasting the wine of the winery
Merlot Voos dai Ciamps has a deep and intense red color. On the nose, it offers a complex bouquet of ripe red fruits, spicy notes, and subtle hints of vanilla and wood from barrel aging. On the palate, the wine is full-bodied and structured, with soft, well-integrated tannins. The total acidity of 619 g/l and a pH of 3.49 ensure freshness and longevity, while the alcohol content of 14.62% vol. adds warmth and richness.
Food Pairings
Voos dai Ciamps is a versatile wine that pairs perfectly with red meat dishes such as roasts and stews, as well as aged cheeses. Its complexity also makes it ideal for game dishes. The balance between acidity and structure allows it to enhance the characteristics of richer, more flavorful dishes, turning every meal into a unique gastronomic experience.
