The pomace, kept fresh and soft, is the main ingredient that gives this grappa its unique organoleptic characteristics.
With its natural aging process and the complete absence of colorants, Nonino Il Prosecco Grappa stands as an authentic and high-quality product of Italian tradition. It is a true gem for grappa lovers, blending artisanal heritage with modern innovation. This grappa invites you to discover Italian culture and passion through a beverage that is as much a pleasure for the palate as it is a symbol of excellence.
The Artisanal Distillation Process
The distillation of Nonino Il Prosecco Grappa is an art passed down from generation to generation. It is conducted in a discontinuous manner, with the cutting of heads and tails, using copper steam stills renewed under the expert guidance of Benito Nonino. This method allows the precious characteristics of the chosen grape variety to remain intact, ensuring pure fermentation in an anaerobic environment in stainless steel tanks. The distillation occurs slowly, allowing volatile components to evaporate and condense properly, preserving the distinctive aromas of the grappa.
After distillation, Nonino Il Prosecco Grappa undergoes natural aging for 24 months in barriques and small barrels, without the addition of colorants, giving the product a light amber hue and a complex, refined aromatic profile.
