The Malvasia wine from Sosol winery is a tribute to the winemaking tradition of the Collio region, renowned for its quality wines and located at the border with Slovenia. Sosol winery, founded in 2019 by Ivan Sosol, is the result of the passion and commitment of a new generation that decided to revive the vineyards of his grandfather, Milano Gravner. Ivan embraced traditional techniques, integrating them with a modern and innovative approach to create wines that reflect the unique character of the territory. Malvasia is one of the five wines produced by the winery, each an authentic expression of the Oslavia terroir.
The Winemaking
The winemaking process for Malvasia is meticulously crafted to enhance the intrinsic qualities of 100% Malvasia grapes. Grapes are harvested from 15-year-old vineyards cultivated using the Guyot method, in the second decade of September when they reach optimal ripeness. Cold maceration lasts between 3 and 6 hours, a crucial step to preserve the delicate aromas and varietal integrity of the wine. After gentle pressing, fermentation occurs in stainless steel, followed by an 8-month aging in steel, allowing the wine to develop a harmonious structure and complex aromatic profile.
Tasting the wine
Tasting this Malvasia is a rich and engaging sensory journey. The wine displays a bright straw-yellow color, enriched by golden reflections. On the nose, floral and fruity notes are perceived, with aromas of peach, apricot, and white flowers. On the palate, it is full-bodied and enveloping, with an elegant structure and well-balanced acidity that provides freshness. The taste persists, enriched by delicate mineral notes.
Food Pairings
This Malvasia offers numerous gastronomic pairing possibilities, thanks to its versatility and complexity. It pairs beautifully with fish dishes, such as baked seabass or seafood risotto. Its acidity and structure make it perfect also with white meats, like herb-infused chicken or turkey. Additionally, it complements soft and aged cheeses well, enhancing flavors without overpowering them.

The Sosol Agricultural Company was founded in 2019 in Oslavia by Ivan Sosol, a young entrepreneur determined to carry on the legacy of his grandfather, Milano Gravner.
