The Friulano from Cantina Simon Komjanc is a white wine deeply rooted in the winemaking tradition of Friuli Venezia Giulia. The Winemaking
The winemaking of Friulano Simon Komjanc begins with the de-stemming of the grapes, followed by a cold skin maceration at temperatures between 8° and 10°C for about 24 hours. This process allows the extraction of aromas and flavors from the grape skins. Subsequently, the grapes are pressed, and the free-run must is statically decanted at cold temperatures. After fermentation, the wine is racked and left on the lees until spring, with a frequent and long series of bâtonnage. This method gives the wine a richer and fuller texture on the palate.
Tasting the wine
This Friulano displays a straw yellow color with lively reflections reminiscent of the brightness of white gold. The clarity and brightness are excellent. On the nose, the wine expresses a bouquet of good intensity, with hints of fresh fruit, particularly apple, delicate honey, and a touch of almond. A sweet floral component briefly emerges, enriching the ensemble with delicate spicy notes. On the palate, the wine is dry, savory, and mineral, reiterating the aromatic notes perceived on the nose. The structure is excellent, making the wine balanced and harmonious.
Food Pairings
Ideal for pairing with cured meats, such as prosciutto crudo (even slightly smoked) and speck, without removing the fatty part, which enhances the wine’s flavor. This Friulano can be enjoyed immediately but also benefits from further aging in the bottle. It is recommended to serve the Friulano at a temperature of 12°C to fully appreciate its organoleptic characteristics. A perfect blend of tradition and enological innovation.

The winery Simon Komjanc is located in the heart of the hills of San Floriano del Collio, specifically in the Valerisce area, within the renowned D.O.C. Collio, famous for its excellent wine production. With a total area of 20 hectares, of which 11 are dedicated to vineyards, the company produces an average of 600 hectoliters of wine, mainly distributed in Italy.
