The Chardonnay from Dobuje Winery
The Chardonnay from the Dobuje winery is a symbol of excellence in the wine region of BRDA, Slovenia. This variety, known for its versatility and refined character, is cultivated in two distinct vineyards. The first, with 31-year-old vines, surrounds the winery and covers an area of 0.3 hectares. The second vineyard, located in Hruševlje, three kilometers from Snežeče, spans 1.6 hectares and has seven-year-old vines. Both areas benefit from opoka (ponca) soil and optimal exposures, which give the wine a unique complexity and superior quality. Protected by the ZGP geographical designation, the Dobuje Chardonnay represents an authentic expression of the terroir.
The Winemaking
The winemaking process for Chardonnay begins with a manual harvest, which takes place in the first decade of September. The grapes, after being destemmed and crushed, undergo an eight-hour cryomaceration. Subsequently, the must is pressed and fermented in stainless steel tanks, using indigenous and selected yeasts. The wine matures on fine lees for seven months, enriching its aromatic profile and complexity. Partial malolactic fermentation is carried out to smooth the acidity and improve the overall balance. After racking, the wine matures further before being bottled, where it refines for another 4-6 months.
Tasting the wine of the winery
Tasting the Chardonnay from the Dobuje winery offers a sophisticated sensory experience. The wine presents a bright straw-yellow color with golden reflections. On the nose, notes of tropical fruit, like pineapple and mango, emerge alongside hints of citrus and white flowers. On the palate, the wine stands out for its elegant structure and well-balanced acidity, which impart freshness and persistence. The delicate mineral notes, typical of the BRDA terroir, add depth and complexity to the flavor profile.
