The Winemaking

The obtained must is fermented in stainless steel tanks at controlled temperatures. Subsequently, the wine is bottled for a second fermentation, following the classic method, where it matures on the lees for a minimum of 36 months. This process imparts the wine with its aromatic complexity and characteristic fine and persistent pérlage.

In the glass, Airali Pas Dosé presents a deep yellow color enriched with golden reflections. The pérlage is fine and persistent, a sign of careful and lengthy maturation.
