The Collio Bianco Demeter from Edi Keber Winery is a testament to artisanal excellence within the Collio wine landscape. This wine captures the essence of the region through a blend of the three most significant indigenous grape varieties: Friulano (70%), Malvasia Istriana (15%), and Ribolla Gialla (15%). Edi Keber, along with his son Kristian, cultivates the vineyards following the principles of organic and biodynamic agriculture, aiming to highlight the winemaking vocation of the Zegla hill, located on the border between Italy and Slovenia. All the grapes from the Keber’s 12 hectares of vineyards are dedicated to this unique and superb label.
The Winemaking
The vineyards of Collio Bianco are located in the Zegla cru, on soils rich in ponca, a peculiar type of terrain consisting of alternating layers of calcareous marl and sandstone. After harvesting, the grapes undergo alcoholic fermentation in concrete tanks. This method helps preserve the wine’s aromatic purity and minerality. The wine is further aged in concrete tanks for at least five months, allowing it to develop its complexity and structure before bottling.
Tasting the wine
In the glass, Collio Bianco reveals a brilliant straw-yellow color. On the nose, it offers a complex and intriguing bouquet, characterized by intense notes of white peach, cedar, and magnolia, complemented by hints of almond and vibrant mineral sensations. On the palate, the wine is savory and juicy, with a saline softness that culminates in a long and warm finish. This complexity makes it a versatile and fascinating artisanal wine.
