THE WINE
The Solaia of the Antinori winery takes its name from the Solaia vineyard; a vineyard of about 20 hectares located in the Tignarello Estate. Facing South-west, it is located at 350/400 meters above sea level where the ground is rocky and limestone. We are talking about a blend produced for the first time with the 1978 vintage. The initial blend was 80% Cabernet Sauvignon and 20% Cabernet Franc. After the 1979 vintage the winery introduced 20% Sangiovese and made some corrections in the relationship between Cabernet Sauvignon and Cabernet Franc. Solaia is a special wine that is produced only in exceptional vintages.
THE WINEMAKING
The harvest is strictly manual and separated by variety. Upon arrival in the cellar, the grapes are gently de-stemmed and the berries, before being pressed, are carefully selected. The winemaking takes place in steel at a controlled temperature. The 3 different wines age separately for about 18 months in new French oak barrels. These three nectars are then assembled a few months before bottling. Once in the bottle, the wine rests for another 12 months in the cellar before being placed on the market.
THE TASTING
Intense ruby red with violet reflections.The aroma is fresh and warm with pleasant notes of red fruit that alternate with evident floral scents which in turn give way to the spices. Rich and enveloping on the palate, the tannins are evident but perfectly balanced. The wine as also a perfect match between aromas and flavor.
FOOD PAIRINGS
Perfect for any meal, it goes well with red meats and hard cheeses. Must try with braised meat or with mushrooms.
