The Sauvignon IGP from Sara & Sara Winery
The Sauvignon IGP from Sara & Sara Winery is crafted from pure Sauvignon grapes grown in their own vineyards in Savorgnano in Torre, Udine. Situated between 180 and 350 meters above sea level, the hilly terrain is rich in marl and sandstone.
The winery adopts fully organic practices. No herbicides are used in the vineyard, only grass cutting and natural methods for territory protection. In winemaking, clarifications and stabilizers are avoided, using only natural decantation; some wines are not even filtered. Production is limited to 2000 bottles annually.
The Winemaking
The grapes are hand-harvested and gently pressed. This is followed by static decantation at 8°C for 24 hours. Fermentation takes place at controlled temperatures using the grape’s natural yeasts to preserve its aromatic profile. The wine is aged for 10 months in stainless steel tanks with suspended lees, and rests for an additional 4 months in the cellar after bottling.
Tasting the Wine
The wine presents an elegant straw yellow color. On the nose, it reveals intense and complex aromas of ripe fruits like melon, harmoniously intertwined with fresh notes of sage and elderflower. On the palate, it is dry and enveloping, with a smooth texture that caresses the palate. Its long and persistent aromatic finish leaves a pleasant sensation of freshness and complexity.
Food Pairings
Perfect with fish dishes and fresh cheeses, this Sauvignon pairs wonderfully with seafood and shellfish, enhancing their flavors. Try it with fish carpaccio or shrimp tartare for a refined and satisfying culinary experience. Its versatility also makes it ideal for accompanying vegetarian dishes with aromatic herbs.
