The Organic Merlot IGP of the Sara & Sara winery
The Organic Merlot IGP from Sara & Sara is an authentic expression of the territory, crafted from Merlot grapes cultivated in their own vineyards in Savorgnano in Torre, Udine. The vineyards, situated at altitudes between 180 and 350 meters, benefit from hilly terrain rich in marl and sandstone, ideal for imparting unique complexity to the wine.
The winery operates under fully organic principles, avoiding the use of herbicides. Only grass cutting and natural methods are employed to protect the land, ensuring total environmental respect. In the winemaking process, clarifications and stabilizers are avoided, focusing on natural decantation. Some wines are not even filtered, preserving the original flavors. Production is limited to 2500 bottles per year, making each vintage rare and precious.
The Winemaking
The grapes, carefully hand-harvested, are pressed and left to macerate in large oak vats for about 20 days. Fermentation occurs at natural temperatures, using only selected yeasts. Frequent pump-overs ensure optimal color extraction and complete fermentation. The wine ages for 10 months in oak barrels, where fermentation lees are periodically kept in suspension, contributing to a complex structure and rich aromatic profile. After bottling, the wine rests for an additional 4 months in the cellar, refining its character before release.

The Merlot presents an inviting ruby red color. On the nose, it offers a fruity and complex bouquet, with notes of raspberry and blueberry blending with hints of licorice and subtle herbal nuances. On the palate, it is soft and full-bodied, with a perfect match between the aromas perceived on the nose and the flavor. The persistence is remarkable, delivering an elegant and enveloping finish.
