THE WINE
The Champagne method sparklingBrut Nature of the Casa Caterina winery is produced with 100% Chardonnay grapes grown in the vineyards owned by the winery in Monticelli Brusati in the heart of Franciacorta.
After harvesting, the selected grapes are taken to the cellar for winemaking. The first fermentation takes place in steel tanks with the sole use of indigenous yeasts. The second fermentation takes place in bottle (champagne method) and the wine rests on the lees for 60 months. We want to emphasize that for this wine there is no use of sulphites.
Golden yellow with slight amber shades; the perlage is very fine and persistent with a very creamy froth. The aroma is very elegant with delicate fruity and floral hints that alternate with pleasant smoky notes to close with the classic scent of bread crust due to the long rest on the lees. Round and intense on the palate, excellent structure with a good correspondence between aromas and flavor. Very long persistence.
It goes very well with fish, even raw and smoked, and white meats. Must try with mixed cold cuts.
