The Winemaking
The winemaking of Talento Nature Pas Dosé is a meticulous process that begins with manual harvesting at the end of August. The grapes undergo gentle pressing without crushing to preserve the freshness and integrity of the fruit. The fermentation of Chardonnay takes place in stainless steel tanks at controlled temperatures, while part of the Pinot Bianco ferments in barriques. In spring, the blend is bottled, and the second fermentation occurs with 60 months of yeast contact. After disgorging, the wine rests for an additional four months in the bottle before being marketed, reaching an alcohol content of 12.5% vol.
