The Winemaking
Ribolla Gialla Brut Ronco Vieri is crafted using the Classic Method, which involves bottle fermentation. The initial fermentation takes place in stainless steel tanks, while a small portion ferments in wood to add complexity to the aromatic profile. After blending, the second fermentation occurs in the bottle, followed by at least 15 months of aging on the lees. This process gives the wine a fine and persistent perlage and an aromatic bouquet ranging from bread crust to yellow flowers.
