The Winemaking
The winemaking of Cum Laude begins with a careful selection of grapes from the estate’s vineyards. Spring and summer were characterized by drought and high temperatures, while the late-August rains helped maintain grape quality. Harvesting began with Merlot in early September and concluded with Petit Verdot at the end of September. Fermentation takes place in stainless steel tanks with controlled maceration at 24°C, followed by a short aging in 350-liter French oak barriques.
Tasting the wine of the winery
Cum Laude presents itself with a deep mauve-red color. On the nose, it offers a complex bouquet with notes of cherry, blueberry, licorice, pepper, and cocoa. On the palate, the structure is broad and generous, with sweet and well-integrated tannins. The finish is balanced and persistent, giving the wine remarkable aging potential. This wine stands out for its elegance and its potential for evolution over time.
