The Winemaking
The harvest of Pignolo grapes is carried out strictly by hand, ensuring the selection of the best bunches. The grapes are collected in mid-September and laid out in a single layer in 4 kg crates and 20 kg platters, which remain stationary for a few days at room temperature in a shed. Once in the winery, the winemaking begins with an initial maturation in barrique for twelve months, followed by an aging process of at least forty-eight months in large oak barrels. This process allows the wine to develop a complex and harmonious structure. The final bottle aging of at least 12 months ensures a perfect integration of flavors and further evolution of the product.
Tasting the wine
It presents a compact ruby red color, enriched by violet reflections. On the nose, it opens with elegant fruity notes of plum jam, blueberry, and sour cherry, intertwining with delicate floral nuances of dog rose and violet. Completing the aromatic bouquet are balsamic aromas of eucalyptus and tobacco leaf. On the palate, the wine is powerful and almost chewy, with an impetuous sip characterized by vibrant tannins and great finesse. The persistence is virtually endless, highlighting the pronounced minerality that makes this wine a true masterpiece.
