The Pignolo from Collavini Winery is a red wine produced in the Friuli Venezia Giulia region of Italy. It is an indigenous grape variety highly appreciated for its complexity and structure. The 2013 vintage benefited from favourable weather conditions, with thermal excursion between day and night allowing for perfect grape ripening. This wine is emblematic of Friulian winemaking tradition, expressing the local terroir to its fullest.
The Winemaking
The winemaking of Collavini’s Pignolo begins with the manual harvesting of the grapes that are left for about twenty days in a temperature-controlled fruit drying room; the grapes are then destemmed and left to ferment on the skins for approximately three weeks in stainless steel. From the spring following the harvest, the wine ages in oak barrels for five years; after bottling, the wine rests for another two years in the cellar. This process gives the Pignolo a robust structure and a unique aromatic complexity.
Tasting the wine of the winery
Intense ruby red tending towards garnet with ageing; the aroma offers a rich and complex bouquet, featuring notes of ripe red fruits, spices, tobacco, and a slight hint of vanilla due to the wood ageing. The wine is full-bodied and enveloping on the palate, with well-integrated tannins and a freshness that balances its structure. The finish is long and persistent, leaving a lingering aftertaste of ripe fruit and spices.
Food Pairing
It pairs beautifully with red meat dishes, such as braises, roasts, and game. It is also ideal with aged cheeses and mushroom-based dishes. Its complexity and structure make it perfect for enjoying on special occasions, perhaps accompanied by a good book or with friends. THE WINERY
The history of Collavini begins in Rivignano (Friuli Venezia Giulia), in 1896 with Eugenio, the founder, who was the wine supplier of the noble families of Udine and of the shops. The winery management passes from Eugenio to his son Giovanni, who has to drive the company through two wars but, at the end of which, thanks to the rapid acceleration of the commerce, succeeds in establishing the success of the winery thanks to the quality of its wines… go to the winery page
