The Cabernet Sauvignon from Ronchi di Manzano Winery is a wine that elegantly and authentically represents the territory of Friuli Colli Orientali. Produced exclusively from Cabernet Sauvignon grapes, this wine expresses the complexity and richness of a unique terroir, characterized by marl and sandstone of Eocene origin, commonly known as “ponca.”
The vineyards, planted between 1971 and 1998 using the Guyot system, yield high-quality grapes, which are carefully and passionately transformed into this exceptional red wine.
The Winemaking
The winemaking of Ronchi di Manzano’s Cabernet Sauvignon begins with destemming and fermentation at controlled temperatures. Maceration on the skins lasts about 12 days, allowing for complete extraction of aromas and colors. The wine is then transferred to stainless steel tanks for stabilization. Maturation occurs in wooden barrels of various sizes for about twelve months before bottling in June. After bottling, the wine undergoes further bottle aging for two months to fully develop its organoleptic characteristics
Tasting the wine of the winery
Upon visual examination, the Cabernet Sauvignon presents a clear and consistent ruby red color. On the nose, it offers an intense and fairly complex mineral aroma, with fruity notes of dried plum, light underbrush, cloves, and rhubarb. On the palate, the wine is dry yet enveloping, balanced and full-bodied, with remarkable intensity and persistence. The structure is harmonious, with continuous spicy and balsamic notes leading to a very savory finish.
