The Ribolla Gialla Saragialla of the Sara & Sara winery
The Ribolla Gialla Saragialla from Sara & Sara is an authentic expression of the region, crafted from Ribolla Gialla grapes grown in their own vineyards in Savorgnano in Torre, Udine. Situated at altitudes between 180 and 350 meters, the vineyards benefit from hilly terrain rich in marl and sandstone, ideal for enhancing the unique characteristics of this grape variety.
The winery adopts fully organic practices, ensuring a sustainable approach from vineyard to cellar. Herbicides are not used; only grass cutting and natural methods are employed to protect the land. In the winemaking process, clarifications and stabilizers are avoided, focusing on natural decantation. Some wines are not even filtered, preserving the purity of the original flavors. Production is limited to 3000 bottles per year, making each vintage unique and precious.
The Winemaking
The grapes are carefully hand-harvested and, once in the cellar, are whole-cluster pressed. The must with skins is transferred to stainless steel tanks where it remains for 12 hours at a temperature of 1-2°C. This process allows for the extraction of the grape’s characteristics from the skins. A gentle pressing follows; the must is then transferred to French oak tonneaux for fermentation. The wine is aged for at least 6 months in the same tonneaux, acquiring complexity and structure. After bottling, it rests for an additional 4 months in the cellar, refining before being released to the market.
Tasting the Ribolla of the winery
The Ribolla presents a bright straw-yellow color with golden reflections. On the nose, it offers a very pleasant bouquet with floral notes intertwined with hints of underbrush, creating an intriguing aromatic complexity. On the palate, it is fresh and well-structured, with an excellent correspondence between aromas and flavors and a good persistence that leaves a lasting impression.

Excellent as an aperitif, Ribolla Gialla Saragialla pairs perfectly with fish dishes, white meats, and fresh cheeses. It is particularly delightful with grilled chicken, where its freshness and structure balance the smoky, succulent flavors of the dish, offering a refined and versatile culinary experience.
