The Organic Picolit from Sara & Sara Winery
The Organic Picolit from Sara & Sara is a prestigious wine made from pure Picolit grapes, a native Friulian variety, cultivated in the estate-owned vineyards located in Savorgnano in Torre, Udine. These vineyards, situated between 180 and 350 meters above sea level, benefit from hilly terrain rich in marl and sandstone, imparting a distinctive mineral complexity to the wine.
The winery adopts a fully organic approach, ensuring sustainability from the vineyard to the cellar. No herbicides are used; only grass cutting and natural methods are employed for land protection. The wines are free from clarifications or stabilizers, relying on natural decantation, and some wines are not even filtered. Production is limited to just 1200 bottles per year, making this wine particularly exclusive.
The Winemaking
Part of the grapes is harvested before reaching ideal ripeness and left to wither in a drying room for 30 to 60 days. The other part is left on the vine to over-ripen. In years when Botrytis develops, only the botrytized berries are hand-picked during harvest. In years without Botrytis, the grapes are manually harvested between late October and early November. This harvesting method ensures excellent acidity in the wine, allowing it to age for 10-15 years, with a rich olfactory and gustatory profile.
After gentle pressing, the must ferments at controlled temperatures using only natural yeasts. The wine then ages in French oak barrels for 18 months and, after bottling, rests for an additional 8 months before being released to the market.
Tasting the wine by Sara & Sara
The Picolit reveals a captivating golden yellow color. On the nose, it is delicate and very fine, with pleasant notes of dried fruit interspersed with hints of candied fruit, closing with nuances of honey. On the palate, it is sweet but not cloying, slightly tannic, with a perfect match between aromas and flavor. This Picolit is extremely refined, with excellent persistence.
Food Pairings
This wine is ideal as a dessert wine, perfect with dry pastries. It pairs beautifully with blue cheeses, accompanied by fruit preserves, offering a sophisticated and memorable gastronomic experience.
