The Casamatta Rosso by Bibi Graetz is a wine that captures the essence of Sangiovese with distinctive freshness and elegance. Produced in the Poderi di Fiesole, this wine is described as a “little Testamatta,” highlighting its connection to one of the producer’s flagship wines. With an alcohol content of 13.5% vol, Casamatta Rosso offers a vibrant tasting experience, characterized by an explosion of red fruits on the palate and fine, elegant tannins. The vintage benefited from unique climatic conditions, with lower average temperatures and high heat peaks, contributing to a slow and balanced grape maturation, ensuring wines of great elegance with contained acidity.
The Winemaking
The winemaking of Casamatta Rosso is entirely done in steel, a method chosen to preserve the wine’s freshness and playfulness. The Sangiovese grapes come from the Vincigliata and Olmo vineyards, located in the Poderi di Fiesole. After harvest, fermentation takes place in steel tanks for about a week, without maceration at the end of the process. This approach enhances the wine’s fruity and lively character. Subsequently, the wine is blended from different vineyards and aged for six months in steel before final bottling. This process helps maintain the integrity of the Sangiovese, offering a wine that is both fresh and structured.

Intense ruby red with slight garnet reflections; the aroma is nice and refined with pleasant notes of red fruits, violets, blueberries and black currants, which leave room for balsamic and spicy notes. A soft and velvety wine on the palate, it is persistent, endowed with elegant tannins well smoothed by the amphorae.

Regarding pairings, Casamatta Rosso goes well with a variety of dishes. Its characteristics make it ideal to accompany white meats, such as chicken and turkey, or pasta dishes with light sauces.
