The Winemaking
The winemaking process of Casamatta Bianco is meticulously curated to preserve the quality and characteristics of the Ansonica grapes. The vines are located in the Pietrabona vineyard, situated on the southwestern part of the island, characterized by granitic and sandy soils. Graetz uses a traditional training method, the “alberello alla gigliese,” which protects the plants from weather and intense sun exposure. The harvest, strictly done by hand, ensures that only the best bunches are selected. Once destemmed, the grapes undergo a gentle pressing and are fermented at low temperatures in steel tanks to maintain freshness and aromas. Part of the wine is aged in barriques, blending tradition and innovation to achieve a perfect balance between complexity and freshness.
